Description

The Sunchoke was cultivated by the Indians and is now harvested in Central Europe for more than 300 years. The Sunchoke plant was an important food source during the 19th century.

The pleasantly nutty-tasting Sunchoke consists of about 40% of inulin, a swellable, indigestible carbohydrate. Inulin is incorporated into a variety of plants as a reserve material. Unlike starch, inulin is composed of many fructose units, which are made available to the plant as energy supply is required.

Recommended use:

  • Take 2-3 teaspoons daily. The powder can be added to dairy products and salad dressings or used during baking.
