Description
Mung beans contain valuable proteins, fibre, vitamins, carbohydrates and folic acid. Therefore, these peeled beans from Rapunzel are ideal for people who follow a vegan diet. In India, they are considered a staple food and should not be missing in any dal or curry dish. Mung beans in combination with rice and spices are the basis for a delicious kitchari.
Recommended use:
Ideal for Ayurvedic dishes, dals, curries, soups or simply as an accompaniment to rice and vegetables.
Recipe for 3 - 4 servings:
- 400g Rapunzel mung beans
- 4 tbsp white tahini, sesame
- 3 tbsp lemon juice
- 2 teaspoons of garlic, finely chopped
- 200ml of water
- 2 tbsp olive oil, extra virgin
- 1 teaspoon turmeric
- ½ teaspoon cumin
- ¼ teaspoon cayenne pepper
- ½ teaspoon sea salt, iodised
- Pepper to taste
Preparation: First the mung beans are soaked and then cooked according to the instructions on the packet. After they are soft, they can be pureed with a hand blender. Now add the remaining ingredients until a creamy mass is formed. If the hummus is too dry for you, you are welcome to add a little more water. Season everything with pepper and salt and serve the delicacy.
PS: Tastes great with crackers or flatbread.
