This salad is ideal as a delicious, light lunch that will keep you full for a long time. This salad is based on mixed, young leaf salads. There is also smoked salmon, which is high in healthy fats and protein. Avocado and onions round off the flavour, with the latter giving the salad a crunchy texture.

The dressing for the salad is a wonderful mixture of sweet and spicy with mustard and white wine vinegar and gives everything a contrasting taste.

Keto Avocado Salmon Salad (for two people):

Salad:

  • 170g smoked salmon
  • 120g mixed young lettuce (here you can use a ready-made mixture or make the mixture yourself with radicchio, rocket, lettuce and the like)
  • 1 medium avocado, sliced
  • 1/2 medium onion, sliced

Optional:

  • Fresh spinach leaves
  • Pre-cooked broccoli florets

Dressing:

  • 2 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon xylitol
  • 1/2 teaspoon lemon juice
  • Salt and pepper to taste

Preparation

  1. Put all the ingredients for the salad dressing in a food processor and mince everything until it is smooth. Alternatively, you can put the ingredients in an empty glass and stir until emulsified.
  2. Mix the lettuce with the dressing in a large bowl.
  3. Now add the onions and mix everything again.
  4. Finally, top the salad with the salmon and the avocado slices, then season with salt and pepper.
  5. Enjoy!
