Ingredients

  • 2 eggs
  • 2 tablespoons of cocoa powder
  • 2 scoops of chocolate flavoured protein powder
  • 1 sweet potato for a ¾ cup sweet potato puree
  • ½ cup egg whites, separated
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 teaspoon baking powder
  • ½ tsp guar gum

Ingredients for the glaze (optional)

  • 2 teaspoons coconut oil
  • ¼ cup peanut butter

Preparation

  1. Preheat the oven to 160 degrees Celsius.
  2. Wash, peel and dice the sweet potato, then cook until the potato is soft enough to puree.
  3. Add the eggs, egg whites and coconut oil to the sweet potato puree and mix well.
  4. Mix the protein powder, baking powder, guar gum and cocoa powder in a separate bowl.
  5. Add the dry ingredients to the other ingredients and mix well. The dough should be quite thick.
  6. Grease the doughnut mould and add the dough into the mould. (It works best with a pastry bag.)
  7. Bake in the oven for twelve minutes and then immediately remove the doughnuts from the mould and let cool.
  8. For the optional glaze, briefly heat peanut butter and coconut oil and stir them together. Then simply pour the glaze over the cooled doughnuts.
    Note: you can use any glaze you like for the doughnuts!
